Gratin with Eggplant and Cherry Tomatoes

This is a healthy eggplant and tomato gratin made with an easy microwave tomato sauce, which is rich in vegetables. Veggie Maria’s cherry tomatoes are full of sweetness, allowing for a rich and delicious tomato sauce that can be easily prepared in the microwave. Veggie Maria’s fried eggplants are also pre-fried, adding depth and ensuring that the gratin is satisfying and flavorful even with just vegetables. (Ingredients for two people)

Veggie Maria Fried Eggplant 150g
A Veggie Maria Cherry Tomato Slice 150g
A Onion 1/8
A Garlic A clove
A Salt A pinch
Melting Cheese Appropriate amount
Parsley Appropriate amount

Preparation

  • Thaw the frozen fried eggplant in the microwave. Finely chop onions and garlic.
  • Place Ingredients A in a heat-resistant container and mix. Microwave for 5 minutes without a cover. Remove, mix again, and microwave for another 5 minutes.
  • Place the ingredients from step 1 in a gratin dish, cover with the mixture from step 2, and top with melting cheese. Grill in a toaster until the cheese is golden and bubbly. Finish by sprinkling chopped parsley on top.
