Japanese Steamed Egg Custard with Fava Beans

Though it seems like a complicated chawanmushi (Japanese steamed egg custard) that would require a steamer, this is a recipe that can be easily made using a microwave. The only ingredient is fava beans, allowing you to fully enjoy the natural flavors of the ingredients. (Ingredients for two people)

Veggie Maria Fava Beans 60g
A Egg 2
A Water 150cc
A Japanese soup stock Tsp 1/2
A Soy Sauce Tsp 1/2
A Sweet cooking sake Tsp 1/2

Preparation

  • Microwave the frozen fava beans and peel them, setting aside some for garnish. Mix all of A thoroughly.
  • Divide the broad beans into two containers, and strain the mixed A into the containers.
  • Cover the containers loosely with wrap and microwave at 200 watts for about 7-9 minutes. Garnish with the reserved fava beans.
